Sweet potato apple crisp with Naturalvert granola

Try a sweet potato apple crisp with Naturalvert raspberry cacao granola anytime of the day.
Ingredients

Filling

  • 1 large Sweet Potato (preference)
  • 1 large Granny Smith or honey crisp apple or two small
  • 4 tsp Lemon juice
  • ¼ cup Brown sugar
  • ½  tsp Cinnamon
  • 1 pinch Pink Salt
  • 1 ½ tsp Tapioca Flour

Topping

  • ¼ cup Brown sugar
  • ½ cup of Naturalvert granola ( Raspberry Cacao)
  • 1/2 cup butter
  • 1 pinch  pink Salt
  • 1/4 cup Crushed cashews (optional)

Instructions

  1. Preheat the oven to 350 F degrees
  2. Peel the potato and apple making sure to remove outer layer.
  3. Cut potato and apple into dices so that it’s very fine.
  4. In a medium sized bowl, add all the filling ingredients (lemon juice, brown sugar, tapioca flour, cinnamon and salt) and stir. Pour in the potato and apple pieces and toss until evenly coat the pieces. 
  5. Pour the filling into a baking dish (I used 4x8)
  6. In a small bowl mix together all the topping ingredients (brown sugar, cinnamon, salt, nuts if using and butter, Use ¼ cup of naturalvert granola and leave the other half aside for toppings.) and toss until the melted butter has saturated all the dry ingredients and has a wet sand consistency.
  7. Evenly disperse the topping on your filled baking dish, coating all of the potatoes and apples so that no pieces show through. 
  8. Sprinkle Naturalvert granola toppings on top of dish (make sure the granola is a bit fine to give it a nice crust) 
Bake in the oven for 55 minutes or until the top is crispy but not burnt.
