Summer Salad with Passion Fruit Mango Granola Toppings
INGREDIENTS
8 cups of baby spinach
1 medium apple, cored and thinly sliced (I used Honey crisp apple)
¼ cup thinly sliced red onions
¾ cup walnut halves, toasted
¼ cup of Naturalvert Passion Fruit Mango Granola (toppings)
VINAIGRETTE INGREDIENTS
1/3 cup extra-virgin olive oil
2 Tbsp. Apple cider vinegar
2 tsp of brown sugar
2 tsp. honey
Himalayan salt and fresh ground black pepper (to taste)
INSTRUCTIONS
For the vinaigrette:
1. In a small bowl, combine all of the ingredients together and whisk until blended. Season with salt and pepper to taste.
For the rest of the salad:
1. Rinse spinach in cold water for 5 minutes.
2. In a large bowl combine spinach, apples, red onion and walnuts.
Drizzle with the vinaigrette and toss to combine. Sprinkle with Naturalvert granola on top and serve immediately.
