Passion Fruit Mango Granola Popsicles

Passion fruit Mango Popsicles

  • 2 cups mango chunks fresh or frozen*
  • ½ cup coconut water
  • 2 cups plain yogurt (preference)
  • 4 tablespoons honey
  • Passion fruit mango granola

1.     Blend the mango chunks and coconut water until smooth. You can use a blender, food processor, or immersion blender. Set aside.

2.     In a small bowl, stir together the yogurt and honey until well combined. Taste and adjust the sweetness if needed.

3.     Add about 1 tablespoon of mango puree into each popsicle mold, then top with 1 tablespoon of yogurt. Repeat the layers until almost full, leaving a little space at the top so the mixture has room to expand as it freezes.

4.     Use a skewer, chopstick, or butter knife to gently swirl the layers for a marbled look.

5.     Place the lids on the molds, insert the sticks, and freeze for at least 4 hours or overnight and enjoy
