Dough Ingredients:
- 1 cup gluten-free flour blend
- ½ cup mixed berry granola
- ½ tsp salt
- ½ cup olive oil
- 2–4 tbsp cold water
- 1 tbsp maple syrup (for a touch of sweetness)
Filling Ideas (No Refined Sugar):
- Chia Jam
- 1 tbsp Chia
- 1 cup strawberries
- ½ cup blueberries
Instructions:
- Mix flour and salt in a bowl. Cut in the olive oil until it is crumbly.
- Add cold water, 1 tbsp at a time, until dough holds together.
- Divide dough in two, roll out into two rectangles (about 1/8" thick).
- Cut into equal rectangles (approx. 3” x 4”). Should make 6–8 tarts.
- Spoon filling in center of half the rectangles (leave edges clear).
- Top with another rectangle, seal edges with a fork.
- Poke a couple of holes in the top to vent.
- Bake at 350°F (175°C) for 18–22 min or until golden.
