Mixed Berry Toaster Pastry

Dough Ingredients:

  • 1 cup gluten-free flour blend
  • ½ cup mixed berry granola
  • ½ tsp salt
  • ½ cup olive oil
  • 2–4 tbsp cold water
  • 1 tbsp maple syrup (for a touch of sweetness)

Filling Ideas (No Refined Sugar):

  • Chia Jam
    • 1 tbsp Chia
    • 1 cup strawberries
    • ½ cup blueberries

Instructions:

  1. Mix flour and salt in a bowl. Cut in the olive oil until it is crumbly.
  2. Add cold water, 1 tbsp at a time, until dough holds together.
  3. Divide dough in two, roll out into two rectangles (about 1/8" thick).
  4. Cut into equal rectangles (approx. 3” x 4”). Should make 6–8 tarts.
  5. Spoon filling in center of half the rectangles (leave edges clear).
  6. Top with another rectangle, seal edges with a fork.
  7. Poke a couple of holes in the top to vent.
  8. Bake at 350°F (175°C) for 18–22 min or until golden.
