Mango Chia Pudding with Passion Fruit Mango granola

1/4 cup Black Chia Seeds
1 keitt mango ( for purée)
1 cup coconut milk (preference)
2 tbsp. maple syrup

Directions

  1. Pour milk and chia seeds in a jar. Cover tightly with lid and shake to combine. 
  2. Let it rest in the fridge for 1-2 hours or overnight stirring occasionally, until it reaches a pudding-like consistency.
  3. Cut mango into quarters and remove skin to be added into blender for pureeing. 
  4. Begin adding layers starting with granola, chia pudding, and puree until it's filled to the top. Once filled, dice peaches and add to the top with a drizzle of maple syrup, sprinkle coconut shreds and Enjoy!

Please note that you can stir chia seeds and milk in a bowl until it thickens to serve right away. Letting it rest in the fridge for 1-2 hours or overnight  is ideal for best results.
