Caramel Apple Crisp made with Original Granola

Caramel Sauce

Ingredients

·        ⅓ cup maple syrup

·        ¼ cup coconut sugar

·        ½ cup coconut cream

·        1 tsp vanilla extract

·        ½ tsp sea salt

·        ½ tbsp cornstarch (or arrowroot)

Steps

1.     In a small pot, combine maple syrup, coconut cream, and sea salt.

2.     Bring to a boil, then lower heat and simmer. Whisk continuously.

3.     When fully dissolved and slightly thickened, remove from heat.

4.     Stir in vanilla and cornstarch; whisk well until smooth.

5.     Set aside to cool slightly.


Apple Filling

Ingredients

·        4–5 medium apples, thinly sliced

·        ¼ cup maple syrup

·        1 tbsp arrowroot flour

·        ½ tsp cinnamon + nutmeg

·        Pinch of sea salt

·        ¾ of the caramel sauce

Steps

1.     Preheat oven to 350°F (175°C).

2.     Combine apples, arrowroot, spices, salt, and ¾ of caramel sauce.

3.     Place in an 8–9” cast-iron skillet or baking dish.

4.     Bake 10 minutes while preparing the topping.


Granola Crisp Topping

Ingredients

·        1½ cups Naturalvert Original Granola, finely ground

·        ½ cup oat flour

·        ¼ tsp cinnamon + nutmeg

·        ¼ cup olive oil

Steps

1.     Mix granola, oat flour, spices, and olive oil in a bowl.

2.     Combine with your hands until crumbly.

3.     Remove apples from oven and sprinkle topping evenly.

4.     Bake 30 minutes more, until golden.

5.     Broil for under 3 minutes for extra crisp (watch closely).


Serve With

·        A drizzle of the remaining caramel sauce

·        Coconut ice cream or vanilla yogurt

·        Toasted pecans or extra granola on top
