Banana Bread
Ingredients:
- 3 ripe bananas (the riper, the better!)
- 1/2 cup olive oil
- 1/4 cup maple syrup or honey
- 1/4 cup plant-based milk ( I used soy milk)
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ½ cup banana cinnamon granola
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions:
- Preheat oven: Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- Grind granola- Add banana cinnamon granola in food processor to turn into granola flour.
- Mash bananas: In a large bowl, mash the ripe bananas until smooth. You can leave a few small chunks for extra texture if you like.
- Mix wet ingredients: To the mashed bananas, add the oil, maple syrup (or honey), plant-based milk, and vanilla extract. Mix well until everything is combined.
- Combine dry ingredients: In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Mix wet and dry ingredients: Gradually fold the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix, as this can make the bread dense.
- Add extras: If you’re using walnuts or chocolate chips, fold them into the batter.
- Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
- Cool and enjoy: Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
